Basic Pancake Recipe
In case you forgot here is your basic pancake recipe!
Ingredients
100g plain flour
2 large eggs
300ml milk
1 tbsp sunflower or vegetable oil (plus extra for frying)
Pinch of salt

Method
Mix Dry & Wet: Place the flour and a pinch of salt into a large mixing bowl. Make a well in the centre and crack in the eggs.
Whisk: Pour in about 50ml of the milk and the oil. Start whisking from the centre, gradually drawing the flour into the liquid. Once it forms a smooth, thick paste, whisk in the remaining milk until the batter is the consistency of single cream.
Rest (Optional): If you have time, let the batter sit for 30 minutes to allow the gluten to relax.
Heat Pan: Set a medium frying pan or crêpe pan over medium heat. Lightly wipe the surface with oiled kitchen paper.
Cook: When hot, ladle enough batter into the pan to thinly coat the base (about 2 tablespoons). Cook for 1 minute or until the underside is golden.
Flip: Use a palette knife or fish slice to flip the pancake. Cook the second side for about 30 seconds until golden.
Serve: Transfer to a plate and serve immediately with your favorite toppings like lemon and sugar.
Pro-Tip: To keep pancakes warm while you finish the rest of the batter, place them on a plate in a low oven (approx. 100°C).
