Basic Pancake Recipe In case you forgot here is your basic pancake recipe! Ingredients 100g plain flour 2 large eggs 300ml milk 1 tbsp sunflower or vegetable oil (plus extra for frying) Pinch of salt Method Mix Dry & Wet : Place the flour and a pinch of salt into a large mixing bowl. Make a well in the centre and crack in the eggs. Whisk : Pour in about 50ml of the milk and the oil. Start whisking from the centre, gradually drawing the flour into the liquid. Once it forms a smooth, thick paste, whisk in the remaining milk until the batter is the consistency of single cream. Rest (Optional) : If you have time, let the batter sit for 30 minutes to allow the gluten to relax. Heat Pan : Set a medium frying pan or crêpe pan over medium heat. Lightly wipe the surface with oiled kitchen paper. Cook : When hot, ladle enough batter into the pan to thinly coat the base (about 2 tablespoons). Cook for 1 minute or until the underside is golden. Flip : Use a palette knife or fish slice to flip the pancake. Cook the second side for about 30 seconds until golden. Serve : Transfer to a plate and serve immediately with your favorite toppings like lemon and sugar. Pro-Tip : To keep pancakes warm while you finish the rest of the batter, place them on a plate in a low oven (approx. 100°C).

Fréamhú Collective - Siúlóid Eanáir We are organising a lovely outdoor learning experience, a hike in the Wicklow Mountains where we’ll soak up some fresh air and some Gaeilge! Inspired by the work of the late Manchán Magan, we’ll be curating some vocab related to the landscape around us. Along the way, we’ll stop to share some of these words and phrases so you can learn as we walk. We’ll also send out a few conversation starters and bits of vocabulary by email beforehand, so you can brush up and have a few phrases ready to try out with your pals (or some friendly strangers!). This is a relaxed, fun way to immerse yourself in the language, with the bonus of some beautiful views and good company. Wicklow Mountains National Park A calendar for 2026, featuring shots of Wicklow Mountains National Park, is now available for download from our website. We’re enjoying some crisp winter weather in the Wicklow Mountains, but if you’re heading out for a hike in the Wicklow Mountains over the weekend, please be aware that tracks and trails are icy. Temperatures are low – dropping to between -2°C and -4°C, making conditions slippery in places. These conditions may also lead to hazardous driving conditions, so please take extra care on the roads. Please plan ahead and stay safe while enjoying your visit to Wicklow Mountains National Park. A new, temporary walking trail has opened alongside Poulanass Waterfall in Glendalough. The original path was damaged in December 2024 during Storm Darragh, necessitating closure of the path and the creation of a detour for the Wicklow Way and Spinc trails – the new path provides visitors with a safe way to reach the waterfall viewpoints while engineering assessment and repairs continue, and will also form part of the Wicklow Way and Spinc trails until the main path reopens. Thank you for your patience and understanding while work continues – we hope you will enjoy the new path! Share Your News with the Community!
